For some cheeses, like Limburger, the cheesemaker rubs a smear – a solution containing various types of bacteria – on the cheese's surface during the aging process.

The post featured a roughly 40-second video titled, “Limburger,” that shows pictures of garbage, feces, old cheese, and soiled diapers, while voices in the video are sniffing and coughing.

Two of those carboxylic acids are also found in Limburger cheese, McMeniman notes, a known lure for mosquitoes.

Pair it with a seafood dish like Rhine-style mussels, or a soft, fatty cheese like Limburger.

“He also occasionally got a laugh by saying a funny word, like the time he said ‘Limburger cheese,’” Professor Wexler said.
