  1. An American labor leader of the twentieth century. In the 1960s, Chávez organized food harvesters in California , many of them Mexican-Americans like himself, into the United Farm Workers. This labor union led nationwide boycotts against the table grape industry and the lettuce industry in the 1960s and 1970s. Chávez is known for his commitment to nonviolent resistance .
